Our Coffee
At Lagio Coffee Roasters we always choose specialty grade green coffee beans from specific farms. After evaluating the samples (granulometry, humidity, density, etc.) and concluding with the ideal variety, then we proceed to the market.
Once the coffee reaches our facilities, it is stored in special places and kept in ideal conditions of temperature, lighting, humidity and ventilation.
It is then roasted in several different profiles, until we come to the ideal that suits the appropriate variety. It is then evaluated and finally packaged.
Coffee is a ritual for us, so we roast small amounts every day, so that it always reaches your hands fresh.
Roasting
Our coffee is roasted on 100% automatic coffee roasting machines. More specifically, the classic roasting of coffee is done on manual machines and the result is based entirely on the roaster and thus, depending on the conditions, deviations from roasting to roasting are often observed. So, by removing the human factor, we manage to ensure the excellent quality of our coffee, in every roast, in every variety, in every batch. This also sets us apart. Offering you exactly the same coffee you want every time, without deviations.

Cupping
What is cupping?
By cupping we mean the taste test of coffee in order to evaluate it. The test is done by the cuppers, ie the testers who are professionally called Qgraders, ie quality evaluators.
What is it used for?
This process helps us to understand the characteristics, peculiarities and defects of coffee. Following a four-step process, we create notes on the body, aroma, taste, acidity and aftertaste of each coffee sample. So, following these notes we make decisions about what variety of green coffee we will get, what is the ideal roasting profile and how we will combine some coffees to make a perfect blend.
